Ingredients

1 Onion Diced
1 Carrot Diced
1/2 cup Sweet potato, diced very small
3 Tbsp Ginger (minced or 1/2 tsp powder)
4 Garlic cloves, crushed
2 cans Chickpeas (drained and rinsed)
1 cup Vegetable Broth
1 can Coconut milk
4 tsp Curry powder
2 tsp HI Spice Turmeric Ginger Hot Sauce
1/2 tsp Cayenne (optional)
Instructions
- Sauté onions until slightly softened.
- Add, carrots, sweet potato, and continue sauteing.
- Add garlic, ginger, curry, salt, and stir until incorporated.
- Add coconut milk and both cook on low until veggies are soft.
- Serve with your favorite grain.
