Easiest Vegan Chickpea Curry

Ingredients

1 Onion Diced

1 Carrot Diced

1/2 cup Sweet potato, diced very small

3 Tbsp Ginger (minced or 1/2 tsp powder)

4 Garlic cloves, crushed

2 cans Chickpeas (drained and rinsed)

1 cup Vegetable Broth

1 can Coconut milk

4 tsp Curry powder

2 tsp HI Spice Turmeric Ginger Hot Sauce

1/2 tsp Cayenne (optional)


Instructions

  1. Sauté onions until slightly softened.
  2. Add, carrots, sweet potato, and continue sauteing.
  3. Add garlic, ginger, curry, salt, and stir until incorporated.
  4. Add coconut milk and both cook on low until veggies are soft.
  5. Serve with your favorite grain.
  6. Try it with my Perfect Instant Pot Brown Jasmine Rice.
